Istrian Olive Oils


Olives have been cultivated on the Istrian peninsula and pressed for their precious oil since Roman times. The 1600-year-old olive tree on Veliki Brijuni island, off Istria’s south-west coast, is a testimony to this long tradition, as are the ancient terracotta amphorae once used to transport and store the oil, which lie on display in the cellar of Pula’s Roman amphitheatre.

Istria has been named ‘Best Olive Oil Region’ by the 2019 Flos Olei olive oil guide, an honour the region has enjoyed for the fourth year in a row. The 2019 edition of this influential guide lists 79 top Istrian olive oil producers.

Most Istrian olive oil makers are small, family-run outfits producing very limited quantities of this ‘liquid gold’. Though they can’t compete with the quantity made by bigger Italian or Spanish producers, they make up for this by making truly exceptional oils, many of which are organic. In recent years Istrian producers have been collecting a growing number of international awards for their extra virgin olive oils. Out of the 40 Croatian oils that won awards at the 2018 New York International Olive Oil Competition, 29 were from Istria.

Another marker of its high quality is the official appellation ‘Istrian extra virgin olive oil’ which is already protected at the national level since 2015 and will soon receive Protected Designation of Origin (PDO) status at the EU level. This guarantees that all stages of the production process, from cultivation to processing and bottling and packaging, takes place in Istria.

What’s unique about Istria’s olive oil is its delightfully fruity green notes and the pungent, peppery effect it has in the throat: a sure sign it’s high in polyphenols – chemical compounds full of healthy antioxidants. While common Italian olive varieties like leccino and frantoio also grow here, Istria has plenty of its own native cultivars like Istarska bjelica, buža, rošinjola, karbonaca and žižolera, to name just a few.

Terroir

It turns out that geographical position of Istria, soil composition and microclimate is indeed very favourable for growing olives. Somewhat cooler climate like the one in Istria generally does well to olives. Oils from these geographical locations are more aromatic and healthier as they have high levels of unsaturated fatty acids and antioxidants.

About

Ol Istria is the largest olive oil producer in Istria and Croatia, counting 65.000 trees on 220 hectares of land. In the olive groves situated near the sea, some of them are older than 50 years, the following olive varieties ripen: istarska bjelica and buža, leccino, pendolino, picholino and ascolana. Ol Istria has its own oil mill.

Recent Awards: Gold medal at the Los Angeles Extra Virgin Olive Oil Competition (2016), Gold medal at the London International Olive Oil Competition (IOOC), Gold medal at the New York International Olive Oil Competition (2015).

Olive Oil & Food


When pairing olive oil with foods, flavor and intensity should be balanced with other ingredients. Soft, sweet oils are best combined with fish and stronger oils are better served with stronger dishes e.g. bitter vegetables such as chicory and rocket salad. Soft oils, fruity in scent, can be used as salad dressings, added to prepared dishes before serving or in making desserts.

PROCESS – Cold pressing method yielding extra virgin olive oil distinguished by its particularly high content of natural antioxidants. Olives are hand harvested and processed within 12 hours, which secures the base for top quality of this extra virgin oil. All varieties are endowed with a specific taste, scent and intensity, and thus oils, much like wines, can be paired with various dishes. Each drop of this extra virgin olive oil merges centuries of tradition and the most advanced agricultural and production technologies.

TASTING NOTES & CHARACTERISTICS – Golden green jewel of Istrian olive growing, obtained through cold pressing with 0.08 to 0.2% of free oleic acids. High in nutritionally valuable elements and aromatic notes, this extra virgin olive oil features particularly well-balanced piquancy and bitterness, a pleasant flavour, green to yellow colour and thickness.

Cabernet Sauvignon

VARIETAL – 100% Cabernet Sauvignon
TERROIR – Located on Mornarica hilltop close to the sea, dry and sunny during the day. A typical Istrian terra rossa soil. The sea breeze brings freshness during the warmest summer days and the additional warmth at the end of the ripening period aids development of Cabernet Sauvignon’s natural characteristics.
VINIFICATION – Hand harvested in small casks, 8 days fermentation with maceration in Inox vinification, pressing and continuation of the malolactic fermentation in 225L French oak barrels. Continues to mature for 12 months in barrique barrels before bottling.
TASTING NOTE – Deep, dark-ruby color, fruity aromas of blackberries and spicy aromas of pepper and vanilla. Opens as mature and  firm medium structure on the palate with mature sweet tannins of long durability.

VARIETAL – 100% Teran
TERROIR – Location of Vižinada hillside terrain of N-NE exposure. The white soil on the flysch, fresh and deep. The moisture and texture of the soil favorably influence the ripening and the color of the vines, while cooler hilltop nights provide distinctive fruity aromas and freshness.
VINIFICATION – Manual grape harvesting, grape ripening and fermentation with four days maceration in Inox vinifiers, followed by five month ripening on yeast deposits.
TASTING NOTES – Deep dark-ruby colour with purple hues, forest fruit berry aromas, fresh in the mouth, pleasantly long finish and strong fruit flavour.

Terra Rossa

VARIETAL – Teran, Borgoña, Merlot
TERROIR – Positioned at Kaligarići, Lokvadić, Bašarinka and Kršete hillside terrain of S-SW and W exposures. Typical Istrian red soil, shallow and rocky. Selected positions give red grape varieties recognizable Mediterranean warmth while keeping fruitiness, freshness and moderate strength, characteristic of the Istrian red wines.
VINIFICATION – Manual harvest, crushing and grape fermentation by  maceration in stainless steel fermenter. Each variety goes through a distinctive wine-making process in order to convey its special properties. Teran’s short maceration process gives the wine lightness and freshness. Borgoña makes it light and soft with fruity aroma, while Merlot’s medium-long maceration process gives it fullness and fruitiness with soft tannins. The varieties are merged together after the fermentation process.
TASTING NOTES – Ruby-red color, blueberry and blackberry aroma, distinctly fruity, soft, fresh, with pleasant durability and sweet tannins.

Castello

VARIETAL – Merlot, Syrah, Cabernet Sauvignon.
TERROIR – Locations at Devici, Mornarica and Kazaveca with Istrian red soil.
VINIFICATION – Hand harvested in small casks, separately fermented, with different maceration times aiming to achieve the best result. Twelve months malolactic fermentation and aging in different barrique barrels, followed by selection and blending. An additional six months in stainless steel tanks and a minimum of two months in bottles before being released on the market.
TASTING NOTES – Deep, dark-ruby color, fruity and spicy aromas of blackberries, blueberry, coffee, vanilla and caramel. Soft and warm Merlot, fresh, elegant with the specific aroma of Syrah, firm structured Cabernet Sauvignon are all perfectly blended in this cuvee. On the palate Castello is an elegant, soft and still fresh wine with sweet medium tannins and typical Istrian juicy acidity.

White Wine


Malvazija

VARIETAL – 100% Malvasia Istriana
TERROIR – Positioned at Kaligarići, Devići, Pajuhi and Pudarica hillside terrain of S-SW and W exposures. Red soil. Selected locations enable balanced aging of Istrian Malvasia grapes and a full aromatic expression of the variety.
VINIFICATION – Manual harvesting, grape cooling, processing with de-stemming, short and cold maceration or quick processing without maceration, depending on the location and the condition of the grapes. Fermentation in stainless steel tanks at a temperature of 14-16°C, aging on fine lees yeast for six months with 55% malolactic fermentation of the young wines before pairing.
TASTING NOTES – Crystal clear, greenish-yellow color with characteristic flowery-citrus aroma, citrus note of tropical fruit, fresh and light in the mouth, extremely soft and smooth.

VINIFICATION – Manual harvest, delicate pressing of the entire grape in order to avoid a colour separation from the skin. Fermentation process in stainless steel tanks at 14-16°C, maturing on the fine yeast lees (sur lie) for 6 months.
TASTING NOTES – Crystal clear, a greenish-yellow color of fine white fruit aroma, apple, pear, fresh, harmonious, soft in the mouth with pleasant permanence.

Chardonnay

VARIETAL – 100% Chardonnay
TERROIR – Positioned at Podbarat and Pajuhi hillside terrains of S-SW exposure. Typical Istrian red soil, sandy and warm. These locations are characterized by permanent air circulation providing the freshness and aroma of early ripening of white varieties such as Chardonnay.
VINIFICATION – Manual harvesting under the protective inert nitrogen atmosphere of the whole grape, fermented in stainless steel tanks at the temperature of 14-16°C, aging on the fine lees yeast (sur lie) for six months. 30% of young wine goes through malolactic fermentation balancing its fresh acidity.
TASTING NOTES – Crystal clear, greenish-yellow in color, fine aromas of apples, pear and tropical fruit, fresh and harmonious in the mouth with pleasant permanence.

TERROIR – Positioned at Vižinada hillside terrain of N-NE exposure. White soil on the flysch, fresh and deep. Sunlight and soil drainage positively effect aging and colour of the grapes, while cool nights and elevated position provide distinctive characteristics of Terrano – freshly acidic and fruity flavors.
VINIFICATION – Manual harvest of Terrano grapes in small cases with direct drainage of grape flow in pneumatic membrane presses, with controlled alcohol fermentation at low temperatures and aging on fine yeast lees for 6 months. The base wine fermented in a tank using Charmat method.
TASTING NOTES – Crystal clear, slightly effervescent, light and airy pink color, fresh aroma of berry flavors, refreshing, elegant, light and smooth taste.
